The double bond be broken so that the carbon atoms can bond to other atoms. For example polymerisation occurs when the double bond in a monomer is broken and bonds with another monomer to form a polymer. Hydrogenation adds hydrogen across a double bond to increase the melting point of a vegetable oil. The test for unsaturation is to add bromine water to the unsaturated molecule. The double bond breaks and forms a bond with the bromine atoms, this removes the bromine from the reaction so the solution turns from orange to colourless.
